As I'm about to re-listen to episode 6 I just wanna add my 2 cents. The way I do encounter balancing is pretty simple, I ask myself one thing. "What **SHOULD** be there". Followed by "Could it be more awesomer??" Then I do that.
So if they walk into the bandit fortress during their giant group-feast\meal whatever, I'm not gunna magically dissapear the other 25 bandits so they matchup evenly with the party. The party just happened to fuck up hard, and if they think I balanced the encounter they get TPKed by bein outnumbered 4:1. This is finally gotten through to a few of my players who now actually consider retreat, and do it once every few months!! Their survival rate has increased, as has their ability to plan ahead.

The biggest concern I have with it is that it feels to be making the combats quite long.

Stu Venable, you gave out the backlog XP at the end of last session so we all could hear. It sounded like the players only got XP for combat encounters. Do you not give out XP for RP encounters and/or players getting around obstacles without fighting? Example: the Pasha's general and his men. The party could have done a fighting escape, getting away (hopefully) and getting even more XP, but instead Bill worked out a deal and got them out without a fight. Isn't that worth some XP? I always figured XP was overall character experience, not just combat experience. Is that a 5E thing? Or maybe this could be a topic?

This is why I use milestones instead of XP, no hassle calculating it and stuff and since there's no xp-cost for item creation and stuff it doesn't really interfere.
