Is there any kind of Monster Manual, Bestiary or NPC list for Traveller? I'm FINALLY going to run a Traveller game and I realized there are almost no NPCs in the book. How do you guys setup your NPCs?

I make up a name and then roll 2d6 3 times. If it's just a thing they're gonna fight, you only need the 3. If it's an actual NPC, then it gets all 6 but you should probably put the numbers where you think they should be.
If not animal or TL<4, give a gun. CHange gun based on the TL your fight npc is at. If not a level 0 gang member or other miscellaneous mook, give armor 1-5ish depending how annoying you want the fight to be.
Copy paste this as many times as necessary to achieve desired crowd size!

The Experience table on p.87 of the mongoose 2nd ed CRB is a nice place to start for NPCs. Just choose an appropriate category (non-combatant, combatant,) and choose their level of awesone (green to elite) and it will show what sort of skill DM and attribute DM they should have. The other tables on the preceding and following pages can help fill out the NPC as well. Use any as needed.
Creatures are a bit different, but the animal rules on p. 80 are good for whipping something up relatively quickly. Generally I have something in mind (a few traits, basic physical nature) before the session, and adjust on the fly as it comes into play and the PCs interact with it. It might even get a name! (depends on if the pcs discovered it and name it or not)
