Do you use any particular gaming sheets for game preparation? A campaign page (notebook), NPC sheets, computer programs? What do you do to help you be as prepared as you feel you need to be to run a game or campaign?

I always build special character sheets in illustrator for con games. To be prepare as possible I do a couple things;1) Learn the system. 2) Know your hooks. 3) Be prepared to have them do what you weren't prepared for. 4) Have fun.

My indispensable tool these days is Microsoft OneNote. Best thing I have ever found for organizing the work.

Since I mostly game online, my screen real estate is limited. I generally build some sheets in Word for NPCs and PCs fitting as much data in as few pages as possible. For my GM notes, I use Roll20 and put notes directly in the scene pages on the GM layer.
I don't tend to use tactical maps, instead I use photos or artwork representing the scenery to give the players a better, more cohesive idea of what the place looks like.

I prefer to run pre-published adventures, so that's mainly what I have on hand. For rules-heavier and combat-centric games, I'll also have photocopies of all of the monster stat blocks so that I can scribble on them as monsters are injured or taken out of the game. I like to have photocopies of player handouts and secret messages and clues prepared in advance so that I can pass them out when the time is right.
for long-running campaigns I'll post my "cast of characters" online, with notable NPCs, and I'll also post the "Loose plot hooks" that has anything interesting that the players may want to follow up with. If my players are not checking online, I'll print a copy of both of those documents and have them available for the players at the table when they show up for gaming.

Evernote is good as well. But I have to say one notes structure is really good.

Another vote for OneNote. I don't know how it compares to Evernote or Google Drive, as I haven't used either of those for game prep. One thing that I really like is to find or make images and save them to a particular page of my notebook. Then I can pull that page up on my tablet and pass it around to the players. It's great for when I want to show an image, but not the surrounding text. Finally put an end to my days of juggling a Bestiary/MM trying to cover up stat blocks while still showcasing the picture!

JiB Any chance using the OneNote web app on your Mac would be sufficient? (I have zero experience with Macs, I just noticed this brief how-to). Or maybe a Windows emulator?
