Working on an AFMBE one shot

So, I have several friends in the area that game finally and sadly, due to us all being working parents of young kids, I just cant do a campaign. I figure, in that case, why not try some new systems and run some one shots.
This weekend I run an All Flesh Must Be Eaten game, with a catch...I deliberately did NOT tell my players what Genre the game is. That system (the Unisystem) is also used for other RPG's including Buffy and others. So they dont know what to expect.
I've got all the prep done and here is the basics:
I'm trying to do a sandbox game AND a one-shot, this is a challange for me, and I want to take this to a local con if it goes well.
The game will start out with the players in Saguet, IL a shitty little town on the east side of St. Louis. The Monsanto corperation has its headquarters there (this is all fact so far) and they are the ones who are responsible for Agent Orange (a plant killer that mutates people when exposed and was horrific in the ...vietnam war...i think)
Anyway, secretly Monsanto had a weapons contract with the US government to weaponize Agent Orange, and they have come up with a new compound Agent Z (or Agent Black I havent decided yet). It turns people into zombies.
The players will all start the game in a bar, and the infection will spread outside while they are in the bar, at some point a staff member or member of the band performing in the bar/club will have been bitten on the way in and will bite a couple people back stage or in the kitchen. Then a "bar fight" will break out and turn most of the patrons. The goal being for the PC's and some extra NPC's to survive in case a character dies, they can switch to an NPC.
My first problem is this: amongst the characters is a fresh-out-of-highschool emo kid, several dudes from different walks of life, and a father who has a 3 year old girl as one of his drawbacks.
I need to find a way to have the little girl drawback come into play, as well as explain how the teen kid is involved should those characters be chosen.
Thankfully, all bars close rather early in the midwest (1 am i think) and that is not the case in Saguet, IL so as long as it is early morning, it makes sense for all types to be there (since you have to to buy booze).
Anyway, my other problem is, I dont have any thing for them to DO while they are in the bar prior to the "bar fight", I want them to get a little comfortable that this is NOT a zombie game before i introduce zombies.
Second, I dont have any goals for the characters. I want them to stumble on the goal of "GeT THE HELL OUTTA HERE!" safely, and have stuff planned for if they investigate monsanto (2 characters are employees and one of them KNOWS ABOUT THE PROJECT, but wont talk about it unless REALLY pressured because he NEEDS this job...)
I've seeded the map with thier workplaces, places to get supplies, and there will even be makeshift quarantine barriers that prevent just leaving whenever the Eff they want to...
Is this enough?
What can i do to improve?
