I have a newbie player that I want to encourage to play so I'm looking for ways to let her concept work. Her concept currently includes a giant venomous riding spider... Are there rules for special mounts anywhere that I can use? (Yes this would be a rather unique mount in the setting, Exalted, but not outside the realm of possibility)

you give the players that didn't take the spider, a wild card NPC companion appropriate to their concept. a married individual can bring their spouse, a knight can bring their squire, a father can bring their daughter, a wizard can bring their apprentice, a twin can bring her other twin, Etc.

Well the place to start is the Beast Master edge. Obviously the mounted combat rules on page 83. Then give the spider relevant Powers, BUT the spider's Powers come from the PCs build points. So the PC him/herself will be weakened when the spider isn't around. (You could be generous and say that's one of his minor hinderances.)
