I'm not a fan of cheesecake either. I don't have much of a sweet tooth, and it's usually wayyyyy to sweet for me to enjoy. Just so you know, I once made a recipe for savory cheesecake. It was made with goat cheese. You schmear it on crackers. It was fucking fantastic, and not bit of sugar in it. It was more of a firm dip, but intensely rich. We need that recipe Stu.

I might had added a bit of seasoning and spice to my letter to get a juicy discussion going, but I had forgotten the incitement to start up a war about cheesecake...

I always wanted to make a savory blue cheesecake with a bacon and walnut topping. I mean, really there is nothing stopping you from making savory cheesecakes with any quiche recipe. just substitute cheesecake for the egg-heavy custard.
That being said, Japanese chiffon cheesecake is god damn amazing.

I'm taking four of them from Osaka back to friends in Tokyo, after having stood in a 1-hour line for them. Osaka peeps don't line up for anything, but they loooooove some Rikuro.

Yes, Rikuro Ojisan no Mise is one of the places that sells this type of cheesecake. They are fucking delicious. Especially when still warm from the oven. I think it originated in Hakata, down in Kyushu, as part of an attempt to use the ingredients that the americans were giving the Japanese after the war. Regardless is it fucking great and everyone should have some. I almost want to go and get one right now and eat the whole thing myself.

If you ever find yourself over here again, I'll get you set up. ;-) Yeah, for some reason, the raisins in Rikuro's soufflé really make it work.
