As I have posted in other threads here on the forums recently (today), I have been gaming for 18 years, but never explored many systems other than D&D. What systems would you veteran gamers consider to be "Required Reading" for a gamer to have a knowledge of the best and most popular RPG systems. Here are a few of my guesses, but more input is definately welcome.
Vampire HERO FATE GUMSHOE GURPS D&D 1 D&D 2 d20 games Savage Worlds ARS Magica? Call of Cthulhu (does this have its own system or use only other systems?)
...others?

Ubiquity System DCC RPG
Both system are great, IMO, for beginning DMs. Ubiquity is more simpler than Savage Worlds and very similar to it. DCC RPG focuses more on dungeon crawling (hence the name) and less on RP. But once the novelty wears off, beginning DMs will usually venture to RPing in a timely way. I think DCC is a good gateway "drug" to DMing.

I don't know that I would say there are, "Must Know" systems, but rather that everyone should try all the systems they can possibly put their hands on. Some I would add to the list to try out are Dungeon World (Derivative of Apocalypse World) I have not played AW but I have played DW and liked it a lot. AW comes highly recommended by reliable sources as well. Beat to Quarters (Wind driven navy game. I played a game that was run by WillH and it was a ton of fun, but then again the grog may have contributed. ) Wicked Age (I played it once at a con and had a so so review at the time but I don't think it's the system rather some dynamics going around the table at the time.) Psi*Run (Loads of fun) Shab al Hiri Roach (Very interesting game with some fun mechanics and possibilities) Cheers, JiB

At first I thought you should expand Vampire to include White-Wolf's SAS (Storyteller Adventuring System). And maybe so... but while the mechanical system is the same across their products (mostly... there's the Classic version and the New WoD version), the feel and tenor of the various games (Vampire, Werewolf, Mage, Demon, Wraith, Changeling, etc) is very different. That feel definitely affects the application of the mechanics.

From what i herd Dungeon World is a lot clearer read then Apocalypse World but i have no personal experience with either.
If i was to make an actual numbered list i would go with something like.
Dresden Files (Fate) (Just so you can appropriate what an awesome read a rule book can be) Savage Worlds Gurps WoD (I have grate hate for there lackluster mechanics but they can be interesting reads) --- Other stuff ---- FATAL (Because everybody should just to see how horrible it is)

Dogs in the Vineyard The dice mechanics are different and good, but I think this little book really shines when you get into the "world building". The setting is okay, but the core of creating a town could be used in any system. Spirit of the Century One of my favorite books. I think FATE in general really helps with improvising. Kingdom of Nothing Another Indie game that is great, but hard to explain simply, so here are two reviews. gamishdesigner.blogspot.com/2011/03/review-kingdom-of-nothing.htmlgmwithadd.com/?p=67

We all read as many systems as we can, but sadly only get to play a handful. The payout for this fact, is that the more systems you read and understand, the more ideas and mechanics you have for the systems you do get to run.
I recommend reading the biggest variety you can.
GURPS - to see how there can be a mechanic for anything you dream up.
[countless times I've seen a mechanic in GURPS that I converted to another system to base an adventure off of.]
Any FATE game - to see the power of simple descriptive phrases.
WoD and its accompanying milieu - to see how a handful of additional mechanics and mood can make a unique experience out of a generic system.
Indie Games! - these cats try the craziest stuff, and often it pays off (usually only a couple bucks, too).
Amber Diceless - to see how a character creation system can ruin friendships forever.
Variety of systems in your mind makes you a better GM.

I'll add: Exalted Deadlands Castle Faulkenstein Feng Shui Weapons of the Gods Cyberpunk Traveller Over the Edge Read/play as many as you can. I don't think you can really narrow it down to just 30. Amber Diceless - to see how a character creation system can ruin friendships forever. Really? I have not found that to be the case at all and that was with 4 different campaigns over 10 years. (Which shows how peoples experiences vary...)

My Amber games were in the infancy of my gaming years. Too many competitive players trying to "Win" at role playing. If that nature is already there, that entire system encourages play at the cut throat level (which really is a testament to how it's written, and in my opinion, a perfect reflection of Zelazny's world, haha). I guess my player just couldn't leave it at the table and made it personal.
