At this last Orccon, I ran a PF game in a world I'm building out for a (possibly) online game. The world is based in Norse mythology. I really want to spend a lot of time working on creating this world, but this will be the first of these I've ever built, and am looking for a bit of help.
Does anyone know of any good books that offer up help with this? The Paizo Dungeon Master's guide has been helpful, but I'd love a couple more books to read.

Kobold's Guide to World Building is a good one. It's available on DriveThruRPG

A few bundles of holding ago the bundle was dedicated to world building and I got all that shit for $15! Really useful so far...*goes to putter around in virtual cellar* Besides the Kobold's World Builder, the Gnome Stew books: Eureka and Masks are really helpful. There was also this Icelandic SagasAnd just because I know your a LARP'er ....the current bundle of holding that expires tonight is all LARP books. Which I will be getting for my birthday viking LARP. Bundle of Holding American FreeformWhat books would you recommend for the LARP curious ? Then while you create your world you should play this: and this...(well the whole album really...) and THAN for the REAL viking songs in NORWEGIAN! SKÅL! Curt.

I'm actually not that qualified to talk about LARPs. I ran a World of Darkness LARP for years, which is a non-contact LARP, and played Alliance (formerly NERO Alliance) for a few years. I also dabbled in Amtgard, but there's nearly no RP there that I found.
What it really comes down to for LARP is looking in your area for any that are out there, and go check it out. If there's no LARPs in the Great White North, check out a few different systems. Realms of Conflict, Alliance, NERO, and Adventures Unlimited are a few that come to mind, but there are as many LARP systems out there as there are LARPs, since everyone likes to have their own system.

Not a book, but the Roleplaying Tips newsletter has several issues in the archives on worldbuilding that might be helpful/inspiring: www.roleplayingtips.comBeen awhile since I've read them, so I can't recommend any specific ones that I used extensively.

One piece of advice...
Unless you have a fully dedicated group that is into world exploration games maybe start small. Creating a whole world, cosmology, cities, npcs etc can be very draining and demanding and also can lead to disappointment if your players dont explore so much.
Maybe work on a kingdom/country/nation at first with a general world idea and slowly develop it further as you go?

I second Arcona's opinion. Build small, but at the same time think big. Have some idea of how you want your world to work, but build it up as needed. If you try to build the entire thing at once you'll get overwhelmed. As for tips, I don't know of any books that haven't been recommended already, but A Fistful of Dice on youtube is doing a world-building series of videos that are fairly helpful: www.youtube.com/user/aFistfulofDice

Build what you NEED right now and expand it and add on as things com sup in the game. That way as things change (and they're going to) you can build what you need and not spend time on things that you don't need.
