I play mostly fantasy with the typical good vs evil.
The typical motivation of enemies are: creature: hungry undead: evil mechanics: programming bandit: greed cultist: devotion <whoever>: sadist
I often joke about giving the "random encounters" more depth like for example: A group of skeletons have never seen a human before and think the party to be skeletons desperately trying to escape some flesh-imprisonment. So they rush in to help their struggling brethren out. That would give some fun in-battle dialog.
Are there more fun variations that you guys have used and what was the outcome?

A love story? A troll that falls in love with the dark elf rogue PC? Mistakenly thinks he's a troll lady, because he's never encountered a female of his own species. Think Pepe Le Pew. (If you play a dark elf rogue you deserve this BTW)
Greed is good. A staple in fact. Being in charge of a large organisation is a great way to become divorced from the human cost of your actions.
Fear. The great motivator. Maybe they are a corrupt official and something went awry - now they are desperately trying to cover their tracks.
Sadists and psychopaths have their place, but not usually as the top dog IMO.
