So I just nabbed Uncharted Worlds and while almost every inch of that game is amazing, I'm not sold on the single roll combat resolution.
What PbtA games have you played with simple but satisfying combat?

The Sprawl. The sprawl doesn't have any moves about combat so much as it does the taking of objectives. The best example of this is sniping. It's actually not covered under the 'Mix it Up' move. You could rule that it falls under 'Acting under Pressure' (btw, I may be messing up these move names. Its been a while).
Try not to think about it as a combat. It's a scene like any other. Moves trigger as they would normally.

I've run Dungeon World before and enjoyed that combat quite a bit, in that it had a little bit of ebb and flow, a few opportunities to narrate without resolving the whole combat in one roll. The game with the most fascinating combat resolution for me has to be The Regiment, although that's aimed at a gritty war drama. It's still an interesting design.
But yeah, I am totally down with an objective based system, I'm just not sure I like resolving that objective in a single roll, just like I wouldn't want to resolve a car chase in a single roll. The closest I've come to a resolution like that has been Cortex Plus/Prime, where there's an initial roll-off, and then the losing party can either raise the stakes or choose to concede, which is, I feel, a much more interesting way of doing it. No idea how or if that'd play nice with PbtA though. I figure not.

What part of single roll combat resolution are you unsatisfied with carrotandstick? Also, what type of feel are you going for? The combat moves in Dungeon World and Monster of the Week might be what you're looking for. You can zoom out and use them to resolve a combat with a single roll, but their triggers are more about an intent to deal damage, rather than damage as a side effect of achieving an objective. I haven't dug into them much, but the new battle moves in Apocalypse World 2e might also be more to your tastes.

I think, on some self-reflection, that it wasn't the single roll resolution so much as how nebulous that resolution was...reading the Apocalypse World 2e combat moves, which I was recommended over on rpg.net, I like how they give just enough definition that you can clearly understand what should accomplishable (not a word, but eh) in a single exchange, and that I really like.
So yeah, consider Apocalypse World 2e combat moves thoroughly pilfered. =)
